Since Content Views Pro 4.0, you can do it as same as replacing layout in Blog, Category, Search… page. Please check this document for complete tutorial.
In Content Views >> Replace layout page:
For Woocommerce Category page, please enable option Taxonomy Archives >> Product Category.
For Woocommerce Shop page, please enable option Post Type Archives >> Product.
